What I take for an easy, healthy lunch

Part of my meal prep every week is to have some type of protein ready for my lunches. It makes lunch super easy because all I have to do is add some veggies and I'm good to go. In the summer it is often salad, and in the winter I will mostly take soup.

Today I am going to share one of my favourites protein recipes with you - Chicken Curry Protein Muffins. This recipe is also a staple in many of my detox programs because it is gluten-free & dairy-free.

7 ingredients • 45 minutes • 6 servings

Ingredients

  • 1 lb Extra Lean Ground Chicken (you can also use ground turkey)
  • 1/3 cup Sweet Onion
  • 2 tbsps Egg whites
  • 3 tbsps Indian curry paste
  • 2 tsps Dijon Mustard
  • 1 tbsp Ground Flax Seed
  • 1 1/2 tbsps Cilantro (or coriander)

Instructions

1. Mix all ingredients together & spoon in to greased muffin tin.

2. Bake at 375F for 40 minutes.

Sounds yummy! I’ll add it to my low-carb recipe list! I often enjoy an avocado and mixed seeds with romaine lettuce salad for lunch.
